These recipes preserve the original ministry quantities and are designed for volunteer preparation in two 9 x 12-inch disposable foil pans per recipe batch. SERVICE NOTE: Please bring dishes hot and ready to serve.
Sloppy Joes (ODD MONTHS) IMPORTANT: Double this recipe for the ministry meal.
Ingredients - original recipe
2 1/2 lb ground beef
1 medium onion, chopped
2 1/2 Tbsp Worcestershire sauce
1/3 cup brown sugar
Salt, to taste
Black pepper, to taste
1/2 cup ketchup
1 Tbsp mustard
1 (10.75 oz) can cream of mushroom soup
Preparation
Brown the ground beef with the onion, salt, and pepper. Drain excess grease. Add Worcestershire sauce, brown sugar, ketchup, mustard, and cream of mushroom soup. Stir thoroughly until evenly combined and heated through.
Transfer to two 9 x 12-inch disposable foil pans. For ministry service, prepare a double batch as noted above.
Meat Loaf (EVEN MONTHS) Ingredients
1 lb ground beef
3 lb ground turkey or beef
1 lb sausage
1/2 cup mustard
10 eggs
4 cups bread crumbs
1 cup chopped onion
Ketchup, as needed for mixture and topping
Salt and black pepper, to taste
Preparation Preheat oven to 350°F. Mix all ingredients and press evenly into two 9 x 12-inch disposable foil baking pans. Bake for 1 hour. Spread ketchup over the top and bake an additional 15 minutes, or until fully cooked.
Cheesy Potatoes Ingredients
2 (32 oz) packages frozen hash brown potatoes, chopped or shredded
1 cup margarine, melted
2 (10.75 oz) cans cream of chicken soup
20 oz cheddar cheese, shredded
16 oz sour cream
2 tsp salt
Cornflake Topping
4 cups cornflakes, crushed
1/2 cup margarine, melted
Preparation
Preheat oven to 350°F. Mix the potatoes, 1 cup melted margarine, cream of chicken soup, cheddar cheese, sour cream, and salt. Divide evenly between two 9 x 12-inch baking dishes.
Mix the crushed cornflakes with 1/2 cup melted margarine and sprinkle evenly over the potatoes. Bake at 350°F for 45 minutes, or until hot throughout and the topping is lightly crisp.
